The first week of the new year is suppose to be the start of a new healthy habits: full of waking up early, hitting the gym, and eating healthy. I have a full list of New Year’s Resolutions, read about them hereBut, so far all I’ve done is sleep and sleep and sleep. I’ve been so sick with a sinus infection for over a week now, I haven’t even been able to write this blog post that was suppose to be done on Tuesday. But I was finally able to get up and get dressed today and even drank some coffee, so here I am finally sharing this recipe!

Brussel Sprout and Kale Salad with Dijon Vinaigrette.

This recipe is full of healthy greens (brussel sprouts & kale), some sweet and crunchy apples, a slight nuttiness with walnuts, and a tangy vinaigrette to top it off!

Eating the [In-Season] Rainbow

In a previous guest post about Eating the Antioxidant Rainbow, Jen talked about the importance of getting our nutrients from fresh colorful veggies. This salad is a great way to do that while eating produce that is in season! Produce that is in season is usually:

  • Cheaper
  • Fresher
  • More flavorful
  • Easier to find locally grown produce
  • Higher level of antioxidants
  • More variety

Kale, brussel sprouts, and cabbage are all in season in January! They are easy to find in every produce section and should be available at your local farmer’s market. So pick some up on your next trip to the market and try this salad out- it’s perfect as a side or easy meal prep lunch salad.

Brussel Sprout & Kale Salad
Instructions
  1. Mix kale, brussel sprouts, and cabbage together. then add apples and walnuts.
  2. Mix the remaining ingredients together in a small mason jar or Tupperware, shake until well mixed.
  3. When ready to serve, add dressing to the greens, mix well and let sit in the fridge for about 15 minutes to allow flavor to fully absorb.
