Most people go crazy for pumpkin spice in September and October, and then forget about by the time Thanksgiving comes around. I went to Starbucks the other day craving a coconut milk pumpkin spice latte and I was informed they no longer served them, I’d have to wait until next fall. The barista then informed me that I should order the peppermint mocha, which is in season.

Dear Starbucks, please don’t tell me what I’m in the mood for based on the date!

A peppermint mocha is nowhere close to a pumpkin spice latte. The barista added “it’s similar because we can make it with coconut milk to”. What? Yeah I made curry with coconut milk too- and curry is no where close to a pumpkin spice latte! I ended up just ordering my normal coconut milk latte and then went home and ate some of my pumpkin spice sweet potatoes for dessert.

Are you a pumpkin spice lover all fall & winter like me? Awesome! We can also complain about the fact that after Christmas half the grocery stores don’t stalk pumpkin puree! What kind of nonsense is that? It’s like only stalking margarita mix for Cinco De Mayo and then telling people it’s not in season the rest of the year. Good news: Trader Joe’s carries pumpkin puree year round. Thank goodness for Trader Joe’s!

Regardless of your level of love for pumpkin spice, this sweet potato recipe is a perfect side dish or dessert for your Christmas dinner table or potluck. Pumpkin Spice Sweet Potatoes
Instructions
  1. Boil water, add chopped sweet potatoes. Cook until soft, which depends on size. I chop mine into bite size pieces and it takes about 10-15 minutes.
  2. When potatoes are done, drain water, turn burner down to low and mash the potatoes.
  3. Add the almond milk and mix until a good consistency has formed.
  4. Mix in brown sugar, pumpkin pie spice, and nutmeg. Add walnuts on top!
