Trader Joe’s Herb Pots
Trader Joe’s has the cutest little herb plants by their front doors, miniature pots of thyme, rosemary, basil, and sage for $2.
A few weeks ago I bought some Sweet Basil and Thyme (because, why not?!) for our kitchen. They were halfway surviving the darkness that is Seattle in the winter, but then we left for London for five days. I forgot to ask my roommate to water them and our cat is pretty lazy and doesn’t help much around the house, so they were dead by the time I came back.
Side note here: I read an article the other day that said Seattle has been darker during the day for the last week than it ever was during the Solar Eclipse when we were at 93% totality. Crazy. There is a reason why horror movies are film here!
Oh well back to the story. I wasn’t too upset at my plants dying, it was only four dollars out the door (cheaper than buying the pre-packaged herbs in the produce section that are bad within the week anyways!). But I did love how they looked in the kitchen, so I went back to invest another four dollars. Instead, I came back with a big pot of a “Stuffing Garden”, which includes plenty of healthy and rosemary, thyme, and sage for making a great stuffing.
Total investment: $7. It’s a great replacement!
Finding the Right Food
I couldn’t wait to use some of the fresh herbs but I wasn’t in the mood for stuffing, so I grabbed some whole carrots while at the store and made up this quick and easy recipe: Rosemary & Thyme Roasted Carrots. It’s perfect for a holiday side dish or a simple meal prep side, plenty of flavor packed in.
