Instructions
  1. Preheat oven to 400.
  2. Mix olive oil and seasonings in the small bowl, then generously coat each carrot with the mixture. Place on a cookie sheet lined with parchment paper.
  3. Top with fresh herbs, then bake for approximately 30 minutes until soft and slightly darkened.
  4. Serve warm with fresh herbs as a garnish!
