Are you a traditional stuffing fan? You hate all of this newfangled Acorn Stuffed Squash with quinoa and veggies and just want good old bread and sodium that comes out of a box. You suffered through Thanksgiving with your health conscious significant other and random family members that decided late November was the best time to start Whole30 (why would you ever torture yourself like that?). You’ve even eaten healthy(ish) for the last few weeks in preparation for the Christmas feast. All you want is to eat some boxed Stovetop stuffing!

I have just described a very important person in my life: my fiance.

Poor Matt has to suffer through all my healthy cooking and eating. During the making of my Christmas eBook (want your free copy? Just enter your email up in that green bar at the top of the page!) I cooked each recipe more than once to get the perfect recipe and pictures. I made a terrible choice once night after experimenting with a barley stuffing and told Matt there was “stuffing” in the fridge. He texted me the next morning and said “What was that thing you call stuffing?!”. Suffice to say, he was not a fan. Since he accounts for a large percentage of my taste test subjects, I knew I had to create a stuffing recipe for all those Stovetop stuffing lovers.

Tradition Stuffing (with Kale)

Want to know the best thing about this recipe? It can come with or without kale! I love adding in a little bit of healthy whenever I can, Matt prefers to forget about healthy whenever he can. So I made this recipe with people like Matt in mind! It’s super easy to customize for your dinner table, however it is not Whole30 friendly. Sorry to all you Whole30 lovers, one day won’t kill you!

Traditional Stuffing with Kale
Instructions
  1. Heat oven to 350 degrees and grease a large baking pan or casserole dish. Sauté onion in a skillet over medium heat for about 3 minutes. Add apples and celery, sauté 5 more minutes or until apples are tender. Stir in garlic, parsley, sage, and thyme. Transfer to a large bowl, and let cool for a few minutes.
  2. Add in bread and toss, then add broth until well blended. Spoon into the baking pan. Pour melted butter over the top. Bake at 350 degrees for about 30 minutes.
  3. If you want to keep a traditional stuffing, keep cooking for another 15-20 minutes until the top is crispy and brown. If you want to add a healthier ingredient, keep reading. Take the stuffing out the baking pan and mix in the kale in a large mixing bowl. Return to the oven for another 15-20 minutes until the top is crispy and brown.
