Tacos al pastor were initially inspired by the Lebanese shawarma dishes, so it’s really no surprise that they are my favorite tacos. If you are planning on celebrating National Taco Day today (Oct. 4th) or just planning on doing Taco Tuesday next week, give these spicy tacos al pastor a chance!

Instructions
  1. In a food processor, blend the chipotle peppers in adobo sauce, green chili peppers, Thai chili peppers, ½ cup of the pineapple, and a few squeezes of lime juice.
  2. In a large frying pan, combine the blend and the chopped pork on medium/high heat. Cook for 15 minutes, stirring occasionally.
  3. In the meantime, take the rest of the pineapple, onion, cilantro, and a squeeze or two of lime and toss in a bowl until well mixed.
  4. Start heating up tortillas, your meat mixture is almost ready! Scoop a large spoonful into the tortilla and top with the pineapple cilantro mix.
  5. Enjoy with roasted corn, black beans, and a margarita! This recipe should make about 10 tacos.

Pro Tip: This recipe is spicy!! If you’re familiar with the Thai Spiciness rating, this recipe Tacos al Pastorwould be a 3.5 out of 5. Don’t like as much spice? You can take out the Thai chili peppers. Still too spicy? Add about half the chipotle peppers, all the adobo sauce, and a little more pineapple when making the marinade blend.

You can also make this recipe in the oven, just make the marinade blend and let the whole pork chops soak in it all day (or night). Then cook on 325 for about 50 minutes before chopping. This is a great way to grill it as well!
