Ingredients

Serves 2

  • 1 lb ground chicken (or finely chopped chicken thigh)
  • 4 garlic cloves, smashed and roughly chopped
  • 2โ€“4 Thai bird’s eye chiles, chopped (adjust to your tolerance)
  • 1 small shallot, sliced
  • 1ยฝ tbsp neutral oil
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp soy sauce
  • 1 tsp dark soy sauce (for color โ€” optional but worth it)
  • 1 tsp sugar
  • 2 tbsp water or chicken stock
  • 1 large packed cup Thai holy basil leaves (or Thai sweet basil โ€” see notes)
  • 2 eggs, for frying
  • Steamed jasmine rice, to serve

Method

  1. Pound garlic and chiles in a mortar to a rough paste โ€” or pulse briefly in a small food processor. Don’t go smooth; you want texture.
  2. Heat oil in a wok or wide skillet over high heat until it shimmers. Add the garlic-chile paste and shallot. Stir for 20 seconds, just until fragrant โ€” not browned.
  3. Add the chicken. Break it up with a spatula and let it sear against the hot pan. Cook 3โ€“4 minutes until no longer pink and starting to take on color.
  4. Stir in oyster sauce, both soy sauces, fish sauce, and sugar. Splash in the water. Toss to coat โ€” the sauce should glaze the chicken in about 30 seconds.
  5. Kill the heat. Add the basil all at once and fold it through. It will wilt in residual heat in about 10 seconds โ€” that’s the point. Holy basil cooked any longer turns muddy.
  6. In a second pan, fry the eggs in a generous slick of oil over high heat until the whites are crisp and lacy at the edges and the yolks still run.
  7. Spoon the chicken over jasmine rice. Crown each plate with a fried egg. Eat immediately.

Notes from our kitchen

The herb here is the whole dish. Thai holy basil (krapow) is peppery, almost clove-like, and built for high heat โ€” it’s what gives the dish its name. Thai sweet basil works and is far easier to find, but expect a softer, more anise-leaning flavor. Italian sweet basil (the kind we cover in our herb hub) is the wrong tool here โ€” too delicate, too sweet.

Ground chicken is fast; finely hand-chopped thigh is better. The texture is part of why this dish works.

If you can’t find dark soy, skip it. The dish will be paler but no less correct.

What to cook with it

Pad krapow is a one-bowl meal โ€” rice, protein, egg, done. But if you want a fuller table, a simple cucumber salad cuts the heat.
