Provençal Herb-Crusted Lamb Chops

Rosemary, garlic, mustard. Rare in the center, herb-crusted outside.

Ingredients

  • 8 lamb rib chops
  • 2 tbsp rosemary minced
  • 1 tbsp thyme leaves
  • 3 cloves garlic grated
  • 1 tbsp dijon mustard

Method

  1. Smear chops with mustard. Press herbs + garlic onto both sides. Salt heavily.

  2. Sear in cast iron, 2 min/side. Finish in oven 6 min at 400°F for medium-rare.

  3. Rest 5 minutes.
