Ingredients
- 8 lamb rib chops
- 2 tbsp rosemary minced
- 1 tbsp thyme leaves
- 3 cloves garlic grated
- 1 tbsp dijon mustard

Smear chops with mustard. Press herbs + garlic onto both sides. Salt heavily.

Sear in cast iron, 2 min/side. Finish in oven 6 min at 400°F for medium-rare.

Rest 5 minutes.
