Ingredients
- 1.5 cups french green lentils
- 1 onion diced
- 2 carrots diced
- 2 stalks celery diced
- 6 cups broth
- 2 bay leaves
- 1 sprig thyme
Method

Sauté mirepoix in olive oil 8 minutes.

Add lentils, broth, bay, thyme. Simmer 25-30 minutes.

Remove herbs. Finish with red wine vinegar.
