Ingredients

  • 1.5 cups french green lentils
  • 1 onion diced
  • 2 carrots diced
  • 2 stalks celery diced
  • 6 cups broth
  • 2 bay leaves
  • 1 sprig thyme

Method

  1. Sauté mirepoix in olive oil 8 minutes.

  2. Add lentils, broth, bay, thyme. Simmer 25-30 minutes.

  3. Remove herbs. Finish with red wine vinegar.
