Lemon Mint Greek Salad

Cucumber, tomato, feta, olives, and a herb-bright dressing.

Ingredients

  • 1 cucumber thick half-moons
  • 3 tomatoes wedged
  • 0.5 red onion thin slices
  • 6 oz feta cubed
  • 0.5 cup kalamata olives
  • 0.25 cup mint torn
  • 3 tbsp olive oil
  • 1 lemon juiced

Method

  1. Toss cucumber, tomato, onion, feta, olives in a wide bowl.

  2. Whisk olive oil + lemon + dried oregano. Pour over. Top with torn mint.

Pair with
