Ingredients
- 1 cucumber thick half-moons
- 3 tomatoes wedged
- 0.5 red onion thin slices
- 6 oz feta cubed
- 0.5 cup kalamata olives
- 0.25 cup mint torn
- 3 tbsp olive oil
- 1 lemon juiced
Method

Toss cucumber, tomato, onion, feta, olives in a wide bowl.

Whisk olive oil + lemon + dried oregano. Pour over. Top with torn mint.
