Herbed Mushroom Risotto

A patient, fortifying weeknight risotto. Wine, stock, thyme, parmesan.

Ingredients

  • 1.5 cups arborio rice
  • 1 lb mushrooms sliced
  • 5 cups vegetable broth kept warm
  • 0.5 cup dry white wine
  • 1 sprig thyme
  • 0.5 cup parmesan grated
  • 2 tbsp parsley chopped

Method

  1. Sauté mushrooms hard in olive oil; reserve.

  2. Toast rice in butter + shallot, add wine, stir until absorbed.

  3. Add broth a ladle at a time, stirring, 18-20 minutes until al dente.

  4. Stir in mushrooms, parmesan, parsley. Rest 2 minutes off heat.
