CHIPOTLE CHICKEN BOWLS

One complaint I here commonly about meal prep is that is boring to eat the same thing over and over again. I think agree! That’s why I like to make a few options each week to choose from, I talked about that over in this postBut Matt doesn’t mind eating the same thing over and over again, if it’s his favorite recipe:

CHIPOTLE CHICKEN BOWLS

Matt loves Chipotle, would easily eat there every day if he had to. It’s easy, it’s healthy(ish), it’s not too expensive, and it’s tasty! But did you know that you could make these bowls for half the cost and control the ingredients and nutritional value? You can. I make a batch almost every week in under an hour and he never lets one go to waste.

CHICKEN+CHIPOTLE SEASONING+BEANS+RICE+SALSA+VEGGIES… WHAT’S NOT TO LIKE? 

These bowls are easily customizable, just as if you were at the restaurant! Some options to think about:

Rice: White, brown, quinoa, or even cauliflower
Beans: Black, pinto, or a mix
Meat: Obviously, I use chicken. But I usually add in chorizo as well, or you could use steak, pork, or beef. I suppose you could possibly use tofu as well- but I’ve never tried it. Or no meat at all is cool too!
Veggies: Peppers and onions are best! Add lettuce if you prefer a salad more than a bowl.
Salsas: Pico, verde, mild, medium, spicy, corn
Condiments: Sour cream, your favorite cheese, and all the free guacamole you want!

Chipotle Chicken Bowls

INGREDIENT

INSTRUCTION

  1. Cook rice according to directions on package, I use brown rice which takes about 40 minutes to cook so I always start this first.
  2. Next up is chicken, I cook mine in about a cup of water and all the seasoning. Once the chicken is done, I drain the water and crisp up the edges a bit. Feel free to adjust the spices as needed.
  3. Last but not least, the veggies. Simply saute your peppers and onions in a bit of butter, water, or oil until desired softness.
  4. Once the chicken, veggies, and rice are done, it’s time to assemble the bowls! It’s as easy as it sounds, you just pile all the good stuff together and top with your favorite condiments and enjoy!
