Cilantro-Lime Black Bean Tacos

Ingredients

  • 2 cans black beans drained
  • 1.5 cups corn fresh or frozen
  • 0.5 cup cilantro chopped
  • 2 limes
  • 12 corn tortillas warmed

Method

  1. Char corn in a dry skillet. Add beans + cumin; warm through.

  2. Squeeze lime over. Stir in half the cilantro.

  3. Fill tortillas; top with remaining cilantro + lime wedges.
